“The journey of a thousand miles begins with a single sip,” says Lao Tzu’s book of Eastern wisdom, the Tao Te Ching. Or was it “step”, I can’t remember after all this Cabernet Sauvignon. Anyway, the meaning is the same.
Why am I quoting ancient Chinese, Daoist philosophy? Because that’s what ninjas do, but also, because I was reminded of it by this divine Daou Reserve Cabernet Sauvignon from Paso Robles in California, pictured above being carefully cradled in the arms of my six-year-old, Sylvie.
I made sure she was careful, too. Because this is not a cheap wine. It is, however, extremely delicious.
Anyway this wine was not (as far as I’m aware) inspired by Daoism, but instead named after the two brothers, Georges and Daniel, who founded the Daou winery. Perched high on a mountain top in Paso Robles, mid-way up the coast between Los Angeles and San Francisco, it specialises in exceptional quality Bordeaux varieties, grown in limestone-rich soil.
The Flavours
Straight away, this attacks you with strong, rich flavours of dark fruits, cassis, chocolate and spice. Use of oak is surprisingly restrained (it was aged in French oak for 18 months) and perfectly integrated, while silky smooth tannins are paired with barrel-loads of structure and complexity.
